Method

Preparing the Banana Dark Chocolate Ganache

  1. In a saucepan, combine the fresh cream, Banana Flavoured Compound Paste and glucose, then heat.
  2. When the mixture starts to boil, pour it in two stages over the finely chopped dark chocolate and emulsify.
  3. Once smooth, add the soft butter and allow the ganache to set.

Preparing the Saffron Dark Chocolate Ganache

  1. In a saucepan, combine the fresh cream, Saffron Flavoured Compound Paste and glucose, then heat.
  2. When the mixture starts to boil, pour it in two stages over the finely chopped dark chocolate and emulsify.
  3. Once smooth, add the soft butter and allow the ganache to set.

Preparing the Mould

  1. Make sure the praline mould is clean and completely dry.
  2. Polish each cavity gently with a soft, lint-free cloth.
  3. Fill each cavity with tempered dark chocolate. Tap the mould gently to remove any air bubbles.
  4. Turn the mould upside down to drain the excess chocolate. Scrape the surface clean and allow the chocolate shells to set.
  5. Pipe the cooled Banana Dark Chocolate Ganache into each shell, leaving space for the second layer and chocolate seal.
  6. Add a layer of Saffron Dark Chocolate Ganache and allow both layers to set.
  7. Seal the pralines with tempered dark chocolate and scrape off the excess.
  8. Allow the chocolate to set completely before gently removing the pralines from the mould.

Yield: 100 to 130 pralines
