Brioche Twist with Crème Filling
Soft, buttery brioche twisted to perfection, filled with a luscious, creamy centre.
1. In a bowl, combine warm milk, sugar, flavour paste, and yeast. Mix well and set aside for 10 minutes.
2. In a mixer, add flour and salt. Pour in the yeast–milk mixture along with all the eggs and start mixing.
3. Once the dough comes together, add the soft butter and continue mixing until the dough is fully developed.
4. Scale the dough on the table and let it rest for 10 minutes. Then roll it into a square shape, spread the crème filling evenly, and fold over in three folds.
5. Cut the dough into 2 pieces and divide each into 5 strings. Do not cut all the way through. Twist the strings, roll into a round bun, place in a baking mould, and allow to prove.
6. Bake at 180°C for about 30–40 minutes. Once cooled, glaze with Diamond Clear Glaze if desired.
