Madeleines
The Madeleine, or petite Madeleine, is a traditional small cake from France—exquisite and utterly delicious.
1. Mix all the ingredients in a mixing bowl, except the castor sugar, oil, and butter.
2. Mix on slow speed for 1 minute.
3. Mix on fast speed for 4 minutes.
4. Add the oil and butter, then mix for 1 minute on slow speed.
5. Pour the batter into madeleine moulds.
6. Bake at 180°C for 30 minutes.
7. After baking, dip the madeleines in butter and coat with castor sugar.
